It was a beautiful late spring night to walk around the neighborhood just next to New York’s Little Italy. Balthazar French Cafe was busy and beckoning as I approached for an early dinner.

I started with a chilled bottle of Avian water, a perfect preparation for the FRISÉE AUX LARDONS consisting of chicory salad with a warm bacon shallot vinaigrette and a soft-poached egg. This paired beautifully with the HALF CRAB MAYONNAISE.
